This Dolcetto comes from the area of Campo del Pero in Rodello and is 460 meters above sea level. The vineyard is 0,90 hectares on hilly ground with marl calcareous soil and a West South West exposure.
TRAINING SYSTEM AND VINEYARDS
The vineyard is composed exclusively of Dolcetto , with Italian cloning material. The training system is Guyot with 5.000 vines per hectare.
A maceration of the grapes for 7-10 days with several pump overs during the day and two derestage with a temperature-controlled fermentation. After a rest in stainless steel the wine matures in 30 hl semi new oak barrels for approx. 5 months. The wine is left to affine in the bottle for at least 18 months.
A ruby red colour with intense violet reflexes. On the nose evident violet sensations and mature fruit such as cherries and blue raspberries. Structured in the mouth with soft pleasant notes of raspberries and blueberries. The low yield and wine making techniques characterize this Dolcetto as being concentrated and intense and allow the wine to age nicely and best drunk after years in the bottle.
Being so versatile, it pairs well with white and red meats, or as a starter or as a first course.
