    PRODUCTION ZONE

    This sparkling wine comes from the marly and calcareous soils of Rodello, a highly prized area of ​​Alta Langa, of which the Giribaldi company is part. Here, Pinot Noir and Chardonnay grapes are grown to produce sparkling wines which, according to Piedmontese tradition, are strictly obtained with the classic method of refermentation in the bottle. “Matteo Giribaldi”, a young winemaker, began producing Barolo in 2006, a wine that has always been considered a work of art and in 2011 he began his experience with the Spumante, a work of art of our future.

    TRAINING SYSTEM AND VINEYARDS

    The Pinot Noir vineyards (100%) are located in the Rodello area at an altitude of 510 and 560 m above sea level respectively with an eastern exposure.

    TECHNOLOGICAL MENTIONS

    In the 2021 vintage, the harvest is done manually in the last days of August; the grapes with the most suitable degree of ripeness are selected and subjected to a short cold maceration in the press under CO2; this brief contact of the must with the skins (about two hours) causes a slight extraction that will contribute to the donation of color as well as particular scents and aromas that will develop following the fermentation; followed by soft pressing from which only the flower of the must is used. Fermentation takes place in steel vats at a controlled temperature of about 13-14 ° C for about 28 days. The wine thus obtained remains in steel for a few months and during this period a batonage is carried out per week. At the beginning of spring, the tirage is carried out, or the refermentation in the bottle, which will last about 60 days. The wine is aged on the lees for a minimum period of 30 months according to the specifications, keeping the bottles in a horizontal position in the cellar's underground rooms. The bottles are then placed on the pupitres for manual remuage, an accurate and essential preparation for the subsequent disgorgement or final degorgement.

    SENSORY CHARACTERISTICS

    It has an antique pink color; the finesse of its perlage underlines its visual as well as olfactory elegance, immediately hinting at its potential. The nose opens to fruity notes of wild strawberries and currants, hints of pomegranate and floral tones of dog rose, with nuances of sugared almonds; sweet oriental spices and aromatic herbs. On the palate, decisive, fresh, dry, frank and enveloping, dynamic and powerful, greedy in the aromatic returns of red fruits and medlar. The bubble is delicate and caressing, the very long mineral persistence completely envelops the palate inviting you to drink.
