    PRODUCTION ZONE

    This sparkling wine comes from the marly and calcareous soils of Rodello, a highly prized area of ​​Alta Langa, of which the Giribaldi company is part. Here, Pinot Noir and Chardonnay grapes are grown to produce sparkling wines that, according to Piedmontese tradition, are strictly obtained with the classic method of refermentation in the bottle. “Matteo Giribaldi”, a young winemaker, began producing Barolo in 2006, a wine that has always been considered a work of art, and in 2011 he began his experience with the Spumante, a work of art of our future.

    TRAINING SYSTEM AND VINEYARDS

    The Pinot Noir (60%) and Chardonnay (40%) vineyards are located in the Rodello area at an altitude of 510 and 560 m above sea level respectively, with an eastern exposure.

    TECHNOLOGICAL MENTIONS

    The harvest is done manually in the period of late August-early September. The grapes are subjected to a soft pressing from which only the first juice is used. The fermentation takes place in steel vats at a controlled temperature of about 13-14°C for 28 days. The wine thus obtained remains in steel for a few months and during this period a batonage is carried out once a week. At the beginning of spring the tirage is carried out, or the refermentation in the bottle, which will last about 60 days. The wine is refined on the lees for a minimum period of 30 months according to the specifications but in this case, for a part of the bottles of the 2016 vintage it is 70 months, storing the bottles in a horizontal position in the cellar's underground rooms. The bottles are then placed on the pupitres for manual remuage, an accurate and essential preparation for the subsequent disgorgement or final degorgement.

    SENSORY CHARACTERISTICS

    The color is bright golden, with fine and persistent perlage. On the nose an aromatic symphony that combines elegance and power: touches of minerality, dried fruit and honey. The taste is deep, a caressing creaminess, given by the fine perlage, introduces us to a fresh-savoury synergy that balances this sparkling wine. The finish is still elegant but of dense texture and of rare workmanship with hints of both minerals and citrus.
